We all know by now my latest love for all things unicorn. One of my sweet followers on Twitter posted a unicorn cheesecake link to me and I got so inspired. I had seen the ever so fancy and very popular unicorn hot cocoa weeks before being passed around on Twitter, but hadn't attempted it myself. But then I thought... why not? You can do this! So I did. And so can you!
The first one I decided to make was the Unicorn Hot Cocoa. Both recipes I found on Delish.com and then I tweaked them a little bit to my taste. The cocoa they made was purple with a few different colored whipped creams. I stuck to pink whipped cream and blue whipped cream. Pink for us girls and blue for the boys. I also decided to make my hot cocoa mixture pink.

RAINBOW SWIRL WHIPPED CREAM
UNICORN HOT CHOCOLATE
- Make rainbow swirl whipped cream:
- Beat heavy cream and sugar until soft peaks form, about 2-3 minutes. Divide whipped cream into 2 bowls. Stir 3 drops of red food coloring into one, creating pink whipped cream. Stir 3 drops blue food coloring into the other, creating blue whipped cream. Set aside.
- Make unicorn hot chocolate:
- In a large saucepan, combine milk, vanilla, and white chocolate over medium-low heat, stirring occasionally. Once dissolved, stir in pink sanding sugar, and red food coloring adjusting amounts until you get the shade of pink you want. Pour into mugs.
- Top with dollops of each color whipped cream. Top each drink with Lucky Charms, marshmallows and sprinkles. Enjoy!
It took a little bit for the cream to be made but other than that the recipe was easy. Of course digging out all of the charms out of the cereal box took a little while too but that's a fun job for the kids to do to help Mama out.
Ok! So next we move on to the incredible Unicorn Cheesecake. This was intense! It looks so beautiful and whimsical and it taste delicious. It's not overly sweet but it is very rich, so one slice was more than enough for me. I couldn't even finish it! And that is not normal for me hahaha! This was also another recipe I got from delish.com and modified it to suit my taste. You can be creative, add different sprinkles, change up the colors.... it just depends on what you want it to look like.

- In a large bowl using a hand mixer or a stand mixer with the paddle attachment (I used my husband because we don't have either of these) beat cream cheese and sugar until smooth and fluffy, 3 minutes.
- Add heavy cream and beat until stiff peaks form, 2 to 3 minutes more. Add vanilla and beat until combined.
- Divide mixture among 4 small bowls (or one bowl for each color you're using) and 4 drops of a different food coloring to each bowl. Mix 3 drops of red and 2 drops of blue to purple. Stir to combine, adjusting color as desired.
- Add spoonfuls of the dyed cheesecake mixture to graham cracker crust, alternating colors until you’ve used up all the mixture.
- Top all over with sprinkles and lucky charms.
- Refrigerate until cheesecake is firm and sliceable, 6 to 8 hours. We did 6 hours.
- Serve with whipped cream and more sprinkles. Enjoy!
There are my two super fun Unicorn inspired treats I made this weekend. I hope you like how they turned out. The kids had SO much fun making them with me. It was a family affair, because I'm too weak to mix the cream cheese mixture (remind me to get a fancy mixer) and the kids are excellent at digging through cereal boxes to find charms. So thank you to my hubby Jay, for his muscles and to my kids for their amazing treasure hunting skills. Oh and they also decorated the top of the cheesecake (can't you tell)... they covered it with charms hahaha! It's such a fun way to spend a rainy day in with the kids.
