Lentil and Carrot Soup!!!
1 oz 2 tsps butter
1 onion finely chopped
3 to 4 carrots chopped
4 oz lentils (1 cup)
2 stalks of celery chopped
5 cups of water or stock (i like to use vegetable stock)
salt and pepper
1 bay leaf
melt fat in pan, add chopped onions and grated carrot and celery, stir for 3 mins, add lentils cook for a few more minutes, then add water or stock and simmer for about 1 to 2 hrs until lentils are soft. The original recipe said 1/2 an hour but my lentils were not cooked!!!
add milk at the end if its too thick, non fat. I didnt have to do this :)
This is such an easy recipe! ANd so good, my husband absolutely hates lentil soup and he went back for seconds!!! I like it cuz its not all mushy like slop, everything is still in its form and its more like a veggie soup but just with lentils!
Great protein and fiber too if your not really into meat..... like I am right now :)
